Do - barbecued chicken & potatoes

    Prep time roughly 15 - 20 minutes
    Cooking time 1 1/2 hrs

    6 - 8 boneless, skinless chicken breasts
    10 medium potatoes, sliced
    3 - 4 onions, sliced
1 18 oz bottle barbecue sauce
Place half of the potatoes in the bottom of the dutch oven.
Place a layer of onions on top of the potatoes. Repeat.
Next place the chicken breasts on top of the potatoes and onions.
Top with any remaining onions. Pour barbecue sauce over all ingredients.
Put the lid on the dutch oven.
Place 12 briquettes on top of the dutch oven, and 12 underneath.
    Cook for about 1 hours.

Seeing as I'm just using a 10" DO, I scaled the quantities back to 3 chicken breasts, 2 large onions and 3 larger potatoes.
I also added 1 1/2 cups of mixed veggies with a 1/4 cup of water.
I didn't have enough briquettes on hand, so I used my oven set at 370* for 1 1/2 hrs

Was very tender, juicy and tasty!

Welcome to the wonderful world of Dutch Oven cooking, Ken ...
Keep the recipes coming, we haven't seen any here lately ...

I've done so much with so little for so long ... Now I can do nearly anything with almost nothing.

Yes Dusty, thanks for posting that recipe and those links. Since I know nothing about DO cooking I looked around and found this site that seems very good for a DO 101 cooking lesson.
