    Pressure Cooker - Chicken and Gravy

    Feed 2 or 3

    12oz Boneless Chicken Breast
    1/2 cup carrots (shredded or chopped small)
    1/2 cup celery (chopped small)
    1/2 cup onion (chopped small)
    4oz Mushrooms (canned or fresh) - Optional
    1/2 teaspoon oregano - dried
    1/2 teaspoon thyme - dried
    1/2 teaspoon poultry seasoning - dried
    1 cup chicken broth (can use chicken bullion cube with water)
    1/4 cup cream (can use milk or powdered milk reconstituted or half & half)
    1 heaping teaspoon Corn Starch
    2 Tablespoons butter (can use olive oil, corn oil, or any form of shortening)
    Salt and pepper to taste

    Heat Butter in cooker
    Season chicken with oregano, thyme and pepper
    Brown chicken on all sides and remove from cooker
    Put carrots, onion, celery, and mushrooms in cooker and cook until onion is translucent
    Put chicken broth and poultry seasoning in cooker and scrape bottom of pan to get everything loose from bottom of cooker
    Put chicken back in pot and cover
    When pot weight is rocking, reduce heat to gentle rock, and cook for 8 minutes
    Remove cooker from heat and allow it to cool slowly
    When pressure is off pot remove chicken from pot
    Mix corn starch with 1/4 of cream (make sure cream/milk is cold). Stir until no lumps are in the mixture.
    Put cooker (with lid removed) back on high heat and bring to slow boil
    Slowly stir corn starch/cream mixture into cooker stirring mixture in cooker the entire time.
    When mixture has thickened serve over chicken.

    Suggested menu:
    Chicken & gravy
    Idahoan Mashed Potatoes or Ready to Serve Wild & Brown Rice

    I have made this with dark meat of the chicken. It was very good. We have also made this, and called it creamed chicken over briskets. All good with dark meat.

    I will remember that for when I am camping alone. Ms. Susan won't eat dark meat of chicken or turkey where as I like it.
