    Pressure cooker Vegetable Soup

    We used two pressure cookers for dinner tonight. I made vegetable soup, and Edie made pot roast. both turned out great.
    I got my 4qt pressure cooker today. I ordered it at Walmart, and it came in early. The soup and the pot roast was really good according to my son Gary. You know he eats everything and likes it( well we liked it too.)
    The recipe for the soup goes like this
    First of all everyone has his own Idea of what to use, GO WITH IT.
    I used
    1 soup bone with some meat on it(about 1 1/2lb)
    cup of beef broth (8oz)
    1/2 large onion
    Carrots 3 large
    Celery 1 cup
    1 (28oz)can of whole tomatoes ( with juice).
    Small bag frozen mixed vegetables
    Salt and pepper.
    Cook for 10 minuets after it comes to pressure.

    Gary-Gene ... Was that ONE cup of beef broth? .... ... What size can of tomatoes did you use? ...

    I've done so much with so little for so long ... Now I can do nearly anything with almost nothing.

    Yes 1 cup 8oz. I have a box of beef broth, and poured out 8oz. That was a 28oz can of tomatoes.

    George the soup was way better than it is when made normal. The pressure cooker made a big big difference. Add what vegetables you like in your soup it all works. I would have liked to put cabbage in it but there was not enough room in the 4qt.
