    Quick chilli

    1 lb hamburger
    1 can of kidney beans
    1 lg jar of chunky salsa
    3 tablespoons chilli powder

    Drain the fat off the burger before you dump the rest in. Throw a handful in a tortilla shell with some cheese, or dump over tortilla chips or rice.

    Easy-peasy lemon squeezy.

    Some may argue that this is "eastern" Chilli..or not Chilli at all...just because of the beans!

    My "Texas" family and friends always tell me real chili doesn't have beans, but it seems that whenever we are together I am asked to make my chili and the recipe has beans!

    Canned chili is not real food. Yes Ive eaten it. Its a last resort.

    That's why I like this better than canned chili. The only real barrier to eating healthy is the salsa you buy, (or make). If you get salsa with no added salt or anything else besides just veggies, you control what's in it. Everything else is just good ingredients, too. Mystery canned chili has the potential to taste good, but be really bad for you. (I've even used home-dehydrated onions, tomatoes, and assorted peppers to make trail salsa. Mix the dried veggies in a big Ziploc bag. Add water. Let it soak all day in your saddlebag. The sloshing from riding helps. When you get to your site, you have pretty good salsa).

    Lean hamburger, we sometimes add ground up leftover pork roast, too.

    The wetness of the salsa, coupled with the thick purple water from the canned kidney and/or black beans, makes a very good base sauce.

    Add whatever seasoning you like in your chili. I like a lot of chili powder, and a little cumin.

    We use a chili recipe that we got off a box of Ritz Crackers years ago. Very basic ingredients, but we have modified it over the years to meet our taste. There are kidney beans in it, we add copious amounts of garlic, good canned tomatoes, good tomato paste and a good handful of cilantro. Heavy on the chili powder and some cumin..and roasted/chopped Poblano peppers (or just some chopped jalapenos).
