View Full Version : Power bar - what is a good non sugar binder

I am thinking of making my own protein bars. The energy bars have too much sugar and carbs for my needs.

(1) Are there good binders to use that is not sugar based (molases, honey, etc. etc) or fruit/pectin based?

(2) Will the egg/protein (e.g., jelatin) based binders stay stable over hot temperatures and heat (as in, the touring trunk) over long periods of time?

Any recipes or bar recommendations are also much welcomed. I am looking for high protein, low carb/sugar, preferably nuts and seeds. Please, no chocolate or carob. Recipes with hemp and chia seeds would help me out greatly. These seeds provide protein as an energy source combined with relatively heat-stable oils-- unlike flax seed-- that have O-3's that help increase insulin uptake.

The local superstore had Mrs. Mays treo bars that weren't too expensive, but they went out of stock. I haven't ordered online yet. http://www.mrsmays.com/

Interesting . My Oh Yeahs have 26 g protein,sugars 8 g, poly unsaturated fat 3.5g, monounsaturated fat 7g for a total fat of 19g. The salt is 130 g's. This is a 3 oz bar(85g). Looks like some good receipes on the web site. The big killer for me is the salt and saturated fats that most eateries pile into their food. No wonder there are so many obese and sick people in western culture.
