Salt does not agree with my blood pressure. I can exercise and watch my weight but if too much salt is added to foods the blood pressure goes up dramatically. Jerky and most dehydrated foods are the easy way to pack rations for extended trips but they have way too much salt . What can you bring that is low sodium, gives variety and healthy to eat for long trips?

Make your own jerky. There are dozens of low salt recipes on the web. Try a few until you find what works best. We make ours by first making our own Soy sauce
2 T Sodium Free Beef Bouillon
2 t Red Wine Vinegar
1 t Molasses
1/8 t Ground Ginger
ds Black Pepper
ds Garlic Powder
3/4 c Water
In small sauce pan, combine and boil gently uncovered about 5 minutes or til mixture is reduced to 1/2 cup. Store in refrigerator. Stir before using.

We make jerky by cutting cheap roasts into 1/4" strips, trimming the fat, and soaking it in the home made soy sauce, then overnight in the dehydrator.

I'm in the same situation with a low sodium diet, being a veggy makes it even more difficult.
I like to pack in soups and chili, Amy's Kitchen makes a number of lower sodium soups and chilis. Health Valley also has a new line of very low sodium soups and chilis, around 100mg per can iirc. Cans are a little bulky to pack but you can find these at most major grocery stores now, probably along your route. Low sodium tortillas if you can find them, corn tortillas generally have little or no salt, fresh fruit, low sodium cheeses if I find them on the way, beer (no salt :D).
It's definitely a challenge, you might look to packing more fresh foods even with the extra weight and bulk.
