Just bought an Igloo 40qt with wheels ($24) at Wally-World. Looks a little to big to be mounted on the tongue. I know that I will not be traveling with it loaded, so maybe it won't be too big. Plus it's hard to find one that is not red, blue or green and I don't feel like painting plastic.

What size coolers are you bringing with you?

40 qt? ... Wow, that is a biggie. Did you say it had wheels? Maybe you could make a hitch for it, and ...
Most trailer tuggers I know use the 28 qt, or 36 qt. size coolers.
I don't like to have a big cooler on the tongue myself ... too easy to get carried away with unneeded extras. (it all adds up weight wise, ice alone will weigh you down)
The one we use is a 24 qt. jobbie.
We don't carry a lot of things that need to be kept cold, mostly just some bottles of drinking water, maybe some lunch meat and cheese for sandwiches. Most of our food is dryed, or we'll pick up what we need just before we find a campground.
We also carry a collapsable cooler for times we're going to stay in one place for a while, and find we need more cooler space.
As for the cooler color issue, you could have a naugahide cover made for your cooler, in most any color you'd like.
Covers keep your cooler cleaner too, I've found it's much easyer to clean the road crud off a vinyl cover, than it is a plastic ice chest.

I normally take a soft side cooler but I don't have a trailer yet. Makes it easy to stuff in a saddlebag or strap it down if you aren't using it. My cousin just finished his trailer and gave it a test pull last night. He is going to take it apart over the winter and paint it to match the bike and maybe narrow it to the size of his car top carrier. He is still trying to decide on a cooler size also, so keep the suggestions coming.

if I could figure out how to put a picture on here from my computer file I'd show ya my set up with a colman upright ice box cooler works great almost like haveing a small fridge as nothing is in the water it is all contained plus it has a usable table top on it as a work surface
